Deliciously creamy caramel apple cheesecake bars layered with a buttery crust, sweet apple filling, and a crunchy streusel topping.
Ingredients
2 cups all-purpose flour
1/2 cup firmly packed brown sugar
1 cup butter
softened
3 (8 ounce) packages cream cheese
softened
3/4 cup sugar
3 large eggs
1 1/2 teaspoons vanilla extract
3 Granny Smith apples
peeled
cored
and finely chopped (about 3 cups)
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup firmly packed brown sugar
1 cup all-purpose flour
1/2 cup quick cooking oats
1/2 cup butter
softened
1/2 cup caramel topping for drizzling after baked
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine flour, brown sugar, and softened butter. Press into the bottom of a greased baking pan.
- In another bowl, beat the cream cheese and sugar until smooth, then add eggs one at a time followed by the vanilla extract.
- Pour the cheesecake filling over the crust.
- In a separate bowl, mix chopped apples with sugar, cinnamon, and nutmeg; spread over the cheesecake layer.
- For the streusel, combine brown sugar, flour, oats, and softened butter until crumbly; sprinkle over the apples.
- Bake for 30-35 minutes or until set and lightly browned.
- Let cool, then drizzle with caramel topping before serving.
Notes
Allow the cheesecake bars to cool completely before cutting for cleaner slices. Store leftovers in the refrigerator.
