1 1/4 cup packed brown sugar

2 large eggs

3 cups all-purpose flour

1 tsp baking soda

3/4 cup chocolate chips

1 1/2 cup whole milk ricotta cheese

strained

8 oz. mascarpone cheese

1 cup powdered sugar

1 tsp vanilla extract

3/4 cup mini chocolate chips

plus additional mini chocolate chips for topping

optional: chocolate drizzle (melt a 4 oz. Chocolate bar)


Instructions

  • Preheat your oven to 350°F (175°C) and grease a muffin tin.
  • In a large bowl, combine melted butter, granulated sugar, and brown sugar until smooth.
  • Add eggs one at a time and mix in the vanilla extract.
  • In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until combined.
  • Fold in the chocolate chips.
  • Scoop the dough into the muffin tin, pressing down in the center to create a cup shape.
  • Bake for 12-15 minutes or until golden brown. Let cool completely.
  • For the filling, combine ricotta, mascarpone, powdered sugar, and vanilla extract in a bowl. Mix until smooth, then fold in mini chocolate chips.
  • Fill each cookie cup with the cannoli filling and sprinkle with additional mini chocolate chips.
  • For a chocolate drizzle, melt chocolate and drizzle over the filled cups.

Notes

Ensure the ricotta cheese is well-drained for a thicker filling. These cookie cups can be made ahead and filled right before serving for the best texture.
