Ingredients

Chicken thighs

Halal smoked sausage

Cajun seasoning

Instructions

  • In a large pot, heat some oil over medium heat and add the diced onion, bell pepper, and celery. Sauté until softened, about 5 minutes.
  • Add the chicken thighs and Halal smoked sausage to the pot. Cook until browned on all sides, about 7 minutes.
  • Stir in the diced tomatoes, Cajun seasoning, paprika, thyme, and oregano. Mix well to combine.
  • Pour in enough water to cover the ingredients and bring to a simmer. Cook for approximately 20 minutes, or until the chicken is cooked through.
  • Remove the chicken, shred it, and return it to the pot. Stir in the cooked rice, and if using, add optional shrimp in the last few minutes of cooking.
  • Taste and adjust seasoning before serving hot.

Notes

For a spicier soup, increase the amount of Cajun seasoning or add hot sauce. This soup can be made a day ahead and reheats beautifully.
