1 cup packed brown sugar
1/4 cup cornstarch
1/4 teaspoon salt
2 3/4 cups milk
4 large egg yolks
4 tablespoons unsalted butter
1 teaspoon vanilla extract
1 cup heavy cream
2 tablespoons powdered sugar
Instructions
- In a medium saucepan, whisk together brown sugar, cornstarch, and salt. Gradually add milk while stirring to combine.
- Cook over medium heat until the mixture thickens, stirring constantly.
- In a separate bowl, beat the egg yolks. Slowly pour a small amount of the hot mixture into the yolks to temper them, then add the yolk mixture back into the saucepan.
- Continue to cook for an additional 2 minutes, then remove from heat and stir in butter and vanilla extract until smooth.
- Pour the filling into the pre-made pie crust and refrigerate until set, about 4 hours.
- In a bowl, beat heavy cream and powdered sugar until stiff peaks form. Spread or pipe the whipped cream over the cooled pie before serving.
Notes
