Ingredients
5 ounces arugula
2 cups mixed berries (blackberries
strawberries
or blueberries)
8 ounce burrata (drained and torn)
¼ cup roughly chopped pistachios
Balsamic Vinaigrette
2 tablespoons stone-ground mustard
2 tablespoons honey
2 tablespoons white wine vinegar
2 tablespoons white balsamic vinegar
½ cup extra-virgin olive oil
½ medium shallot (minced)
½ teaspoon sea salt
½ teaspoon freshly ground black pepper
Instructions
- In a large bowl, combine the arugula and mixed berries.
- Tear the burrata into pieces and add to the salad.
- Sprinkle the chopped pistachios over the top.
- In a small bowl, whisk together the stone-ground mustard, honey, white wine vinegar, white balsamic vinegar, olive oil, minced shallot, sea salt, and black pepper to make the dressing.
- Drizzle the dressing over the salad just before serving and toss gently to combine.
