1 pound boneless

skinless chicken breasts cut into bite-sized pieces

1/2 cup hot sauce (such as Frank’s RedHot)

1/4 cup unsalted butter melted

2 tablespoons olive oil

Salt and pepper to taste

2 cups cooked rice (white or brown)

1 cup shredded lettuce

1 cup cherry tomatoes halved

1/2 cup shredded cheddar cheese

1/4 cup ranch or blue cheese dressing

1/4 cup thinly sliced green onions

Optional: sliced avocado for topping


Instructions

  • In a large bowl, combine the chicken pieces, hot sauce, melted butter, olive oil, salt, and pepper. Toss until the chicken is well coated.
  • Preheat your oven to 400°F (200°C). Spread the chicken mixture evenly on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and no longer pink in the center.
  • While the chicken is baking, prepare your rice according to package instructions if not already cooked.
  • Once the chicken is done, assemble your bowls by layering the rice, followed by shredded lettuce, cherry tomatoes, and the baked buffalo chicken. Top with shredded cheddar cheese, your choice of ranch or blue cheese dressing, and sliced green onions.
  • Add sliced avocado on top, if desired, and serve immediately.
