1 cup Greek yogurt
1/2 cup blueberries
2 tbsp honey or maple syrup
1 tsp lemon juice
1/2 tsp vanilla extract
1 tsp cornstarch (optional)
Instructions
- In a small saucepan, combine the blueberries, honey or maple syrup, lemon juice, and cornstarch (if using). Cook over medium heat until the blueberries burst and the mixture thickens slightly, about 5-7 minutes.
- Allow the blueberry mixture to cool, then swirl it into the Greek yogurt in a serving dish or silicone molds.
- Freeze the yogurt bites for at least 2 hours or until set.
- Once frozen, remove the yogurt bites from molds and serve immediately or store in an airtight container in the freezer.
