Instructions
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
- In another bowl, combine buttermilk, eggs, melted unsalted butter, lemon zest, lemon juice, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined; fold in the fresh blueberries gently.
- Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
- Let them cool in the tin for a few minutes before transferring to a wire rack to cool completely.
