Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, beat the softened cream cheese and sugar together until smooth.
- Add in the vanilla extract and eggs, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Toss the blueberries with about 1 tablespoon of flour to prevent sinking and gently fold them into the batter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
