Deliciously fluffy Blueberry Biscuits bursting with fresh blueberries, perfect for breakfast or a sweet treat.
Ingredients
2 cups all-purpose flour
1 tablespoon granulated sugar
1 tablespoon baking powder
1 teaspoon salt
6 tablespoons cold unsalted butter cubed
3/4 cup cold buttermilk
1 cup fresh blueberries or 3/4 cup dried blueberries
2 tablespoons melted butter for brushing
1 cup powdered sugar
2–3 tablespoons milk or heavy cream
1 teaspoon vanilla extract or 1 tablespoon lemon juice for lemon glaze
pinch of salt
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the flour, sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the cold buttermilk until just combined.
- Gently fold in the blueberries.
- Turn the dough onto a floured surface and pat it into a rectangle about 1 inch thick.
- Cut the biscuits using a round cutter and place them on the prepared baking sheet.
- Brush the tops with melted butter.
- Bake for 15-20 minutes, or until golden brown.
- For the glaze, whisk together powdered sugar, milk or cream, vanilla extract, and a pinch of salt in a small bowl until smooth.
- Drizzle the glaze over the warm biscuits before serving.
Notes
For best results, use cold butter and buttermilk. Adjust the glaze ingredients based on your desired sweetness and consistency.
