Ingredients
For the Chicken Patties:
1 lb (450 g) ground chicken (preferably 93% lean)

1 large egg
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
2 cloves garlic, minced
½ teaspoon onion powder
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon olive oil (for brushing before baking)
For the BLT Toppings:
4 slices bacon
4 leaves romaine or iceberg lettuce
1 large tomato, sliced
¼ red onion, thinly sliced (optional)
4 burger buns (brioche, whole wheat, or sesame)
For the Sauce:
¼ cup mayonnaise
1 tablespoon lemon juice
1 teaspoon honey or maple syrup
½ teaspoon garlic powder
Pinch of salt and pepper

Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or grease lightly with olive oil.
In a large bowl, combine ground chicken, breadcrumbs, egg, mayonnaise, Dijon mustard, garlic, onion powder, paprika, salt, and pepper. Mix until just combined. Avoid overmixing — it keeps the patties juicy.
Divide the mixture into 4 equal portions. Shape into round patties, slightly larger than your buns. Place them on the baking sheet and brush lightly with olive oil.
Bake for 18–20 minutes, flipping halfway through. The internal temperature should reach 165°F (74°C). For a crisp finish, broil for the last 2 minutes.
While patties bake, cook bacon until crisp — either pan-fried or oven-baked for 10–12 minutes. Drain on paper towels.
Whisk together mayonnaise, lemon juice, honey, garlic powder, salt, and pepper. Adjust seasoning or add hot sauce for extra kick.
Toast buns in a skillet or oven for 1–2 minutes until golden brown. This step adds texture and prevents sogginess.
Spread sauce on the bottom bun. Add lettuce, tomato, and the baked chicken patty. Top with crispy bacon and red onion slices. Add more sauce and cover with the top bun. Serve immediately.
