For the Stir Fry:

pounds (680 g) flank steak or sirloin, thinly sliced

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

2 tablespoons olive oil (divided)

1 teaspoon smoked paprika

½ teaspoon black pepper

½ teaspoon garlic powder

1 tablespoon cornstarch

For the Vegetables:

1 large red bell pepper, sliced

1 yellow bell pepper, sliced

1 medium red onion, sliced

2 cups (200 g) broccoli florets

1 cup (100 g) sliced mushrooms

1 medium zucchini, sliced

2 cloves garlic, minced

2 green onions, chopped (for garnish)

For the Cowboy Stir Fry Sauce:

⅓ cup (80 ml) soy sauce

3 tablespoons brown sugar

1 tablespoon Worcestershire sauce

1 tablespoon apple cider vinegar

1 tablespoon hot sauce (optional for spice)

2 teaspoons sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water

Optional Add-Ins:

1 cup (150 g) cooked rice or noodles for serving

Toasted sesame seeds for garnish


Instructions

Step 1: Marinate the Beef
Combine soy sauce, Worcestershire sauce, smoked paprika, black pepper, garlic powder, and cornstarch in a medium bowl. Add sliced beef and toss to coat. Let marinate 15–20 minutes.

Step 2: Prepare the Sauce
Whisk together soy sauce, brown sugar, Worcestershire sauce, apple cider vinegar, hot sauce, sesame oil, and cornstarch slurry. Set aside.

Step 3: Preheat the Blackstone Griddle
Heat griddle to medium-high (around 400°F / 200°C). Add 1 tablespoon olive oil and spread evenly.

Step 4: Cook the Beef
Sear beef in a single layer 2–3 minutes per side until browned. Remove to a plate and cover lightly.

Step 5: Sauté the Vegetables
Add remaining 1 tablespoon olive oil. Stir-fry garlic, onions, bell peppers, broccoli, mushrooms, and zucchini 5–7 minutes until crisp-tender.

Step 6: Combine Everything
Return beef to griddle, pour sauce over beef and veggies. Stir 2–3 minutes until sauce thickens and coats all ingredients.

Step 7: Garnish and Serve
Sprinkle with chopped green onions and toasted sesame seeds. Serve over rice or noodles if desired.
