Ingredients
1 cup fresh blackberries (plus extra for garnish)
1/4 cup granulated sugar
1 tablespoon lemon juice
1 cup strong brewed coffee (cooled)
1/4 cup coffee liqueur (optional)
8 oz mascarpone cheese
1 cup heavy cream
1/2 cup granulated sugar
1 teaspoon vanilla extract
24 ladyfinger cookies (savoiardi)
Cocoa powder (for dusting)
Instructions
- In a medium bowl, combine the blackberries, 1/4 cup sugar, and lemon juice. Mash the mixture slightly and let it sit for about 15 minutes to release the juices.
- In another bowl, whisk together the mascarpone cheese, heavy cream, 1/2 cup sugar, and vanilla extract until smooth and creamy.
- In a shallow dish, mix the brewed coffee with coffee liqueur, if using. Dip each ladyfinger into the coffee mixture for about 1-2 seconds, ensuring they are moist but not soggy.
- Layer half of the dipped ladyfingers in the bottom of your serving dish. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the blackberry mixture.
- Repeat the layers with the remaining ladyfingers, mascarpone mixture, and blackberry mixture. Cover and refrigerate for at least 4 hours, or overnight for best results.
