Ingredients
4 cups sweet potatoes
peeled and cubed
1/2 cup brown sugar
1/2 cup milk
1/4 cup melted butter
2 eggs
beaten
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup miniature marshmallows
1/2 cup chopped pecans
1/2 cup brown sugar (for topping)
1/4 cup flour (for topping)
1/4 cup melted butter (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mash the sweet potatoes until smooth.
- Mix in 1/2 cup brown sugar, milk, melted butter, beaten eggs, vanilla extract, salt, and cinnamon until well combined.
- Pour the mixture into a greased baking dish.
- In a separate bowl, mix together the topping ingredients: 1/2 cup brown sugar, flour, and melted butter.
- Stir in the chopped pecans and miniature marshmallows.
- Spread the topping evenly over the sweet potato mixture.
- Bake in the preheated oven for 30 minutes, or until the top is golden and the casserole is heated through.
Notes
For added flavor, you can sprinkle some extra cinnamon on top before baking. It’s a perfect dish for Thanksgiving or Christmas.
