4 tablespoons vegetable oil or bacon grease divided
2 cups coarse stone-ground cornmeal
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
2 large eggs
1–½ cups buttermilk
Instructions
- Preheat your oven to 425°F (220°C) and place a 10-inch cast-iron skillet inside to heat.
- In a large bowl, whisk together the cornmeal, baking powder, baking soda, and kosher salt.
- In another bowl, mix the buttermilk, eggs, and 2 tablespoons of the heated oil or bacon grease.
- Combine the wet and dry ingredients until just mixed, then pour in the remaining oil or bacon grease into the hot skillet.
- Carefully pour the batter into the skillet and bake for 20-30 minutes, or until a toothpick comes out clean.
- Let it cool slightly before slicing and serving warm.
Notes
