Ingredients
3 chicken breasts (cut into 1-inch cubes for even cooking)
1.5 tbsp olive oil (I use Bertolli extra virgin)
1 tsp oregano
1/2 tsp salt
pepper
4 cups romaine lettuce
1 cup tomatoes (halved or sliced into 1/2-inch pieces)
1 red onion (thinly sliced into half-moons)
1/2 cucumber
1/2 cup olives (I prefer Mezzetta pitted kalamata)
1/2 cup Greek dressing
2 cups tzatziki
3/4 cup feta (I like President crumbles for better texture)
2 tbsp fresh dill (chopped)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, toss the chicken cubes with olive oil, oregano, salt, and pepper until well-coated.
- Spread the chicken evenly on a baking sheet and bake for 25-30 minutes or until fully cooked.
- While the chicken is baking, prepare the salad by combining romaine lettuce, tomatoes, red onion, cucumber, and olives in a large bowl.
- Once the chicken is done, let it cool slightly before adding it to the salad mixture.
- Drizzle the Greek dressing over the salad and toss gently to combine.
- Serve the salad topped with tzatziki, crumbled feta, and fresh dill.
