10 ounces mushrooms (cremini or button)

1 small onion

3 garlic cloves

1 cup beef broth (low-sodium)

1 tablespoon Worcestershire sauce (check label for sugar; coconut aminos if preferred)

1 teaspoon Dijon mustard

1 teaspoon smoked paprika (or regular paprika)

1/2 teaspoon dried thyme (or 1 teaspoon fresh)

3/4 cup sour cream (full fat)

1/4 cup heavy cream (optional for extra silkiness)

Salt and black pepper

to taste

Fresh parsley

chopped

for garnish


Instructions

  • In a large skillet, heat the butter and olive oil over medium-high heat. Add the sliced beef and cook until browned, about 5-7 minutes. Remove the beef and set aside.
  • In the same skillet, add the onions and mushrooms. Sauté until the mushrooms are browned and the onions are translucent, about 5 minutes.
  • Add the minced garlic and cook for an additional minute until fragrant.
  • Return the beef to the skillet. Add the beef broth, Worcestershire sauce, Dijon mustard, smoked paprika, thyme, salt, and pepper. Bring the mixture to a simmer and cook for 10 minutes.
  • Reduce the heat to low and stir in the sour cream and heavy cream (if using). Cook for another 5 minutes, stirring until the sauce is heated through and creamy.
  • Serve garnished with fresh parsley alongside your choice of cauliflower mash, zucchini noodles, steamed green beans, or shirataki noodles.
