Ingredients
2 medium sweet potatoes
peeled and cubed
1 tablespoon olive oil
1/2 teaspoon paprika
1/2 teaspoon garlic powder
salt and black pepper to taste
2 cups cooked chicken breast
chopped or shredded
1/2 cup barbecue sauce
1 cup corn kernels
1 avocado
diced
1/4 cup red onion
finely chopped
Optional: chopped cilantro or lime wedges
Instructions
- Preheat the oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread them out on a baking sheet.
- Roast the sweet potatoes in the preheated oven for about 25-30 minutes, or until they are tender and caramelized at the edges, stirring once halfway through.
- While the sweet potatoes roast, in a medium saucepan over low heat, combine the cooked chicken and barbecue sauce, stirring until heated through.
- Once the sweet potatoes are done, remove them from the oven and assemble the bowls by adding the roasted sweet potatoes, BBQ chicken, corn kernels, diced avocado, and red onion. Top with cilantro or serve with lime wedges if desired.
Notes
For a quicker meal, use rotisserie chicken and microwave frozen corn. Soaking the red onion in water for a few minutes reduces its intensity.
