Instructions

  • Preheat your smoker using hickory pellets and prepare the brisket by applying mustard as a binder and generously coating it with your favorite pepper-forward brisket rub.
  • Smoke the brisket until it reaches an internal temperature of about 190°F, spritzing with apple cider vinegar every hour for moisture, which usually takes around 6-8 hours.
  • Once done, allow the brisket to rest for at least 30 minutes, then slice thinly.
  • While the brisket rests, slice the onions and sauté them in a pan over medium heat with avocado oil and kosher salt until caramelized, about 15-20 minutes.
  • In another skillet, melt butter and toast the slices of sourdough bread until golden brown.
  • Assemble the melts by layering brisket, caramelized onions, fried crispy onions, and cheese on one slice of toasted sourdough. Drizzle with your favorite BBQ sauce. Top with another slice of sourdough.
  • Grill the assembled melts in the skillet, pressing down gently until the cheese is melted and the bread is golden, about 3-4 minutes on each side.
