Description

Baked Eggs Napoleon is a delightful and simple brunch recipe featuring layers of flaky pastry, creamy spinach filling, and baked eggs, perfect for any occasion.


Ingredients

1 package (14.1 oz) frozen puff pastry sheets

1 beaten egg (for egg wash)

Everything bagel seasoning (optional)

1 tbsp olive oil

1 finely chopped shallot

2 minced garlic cloves

10 oz fresh spinach

roughly chopped

4 oz softened cream cheese

1/4 cup heavy cream

1/4 cup grated Parmesan

1/4 tsp nutmeg

4 large eggs

Salt and freshly ground black pepper to taste

Chopped fresh chives (for garnish)


Instructions

  • Preheat your oven to 400°F (200°C).
  • Roll out the puff pastry sheets on a floured surface and cut them into squares to fit your baking dish.
  • Place the pastry squares into a greased baking dish, pressing them against the sides.
  • In a skillet, heat the olive oil over medium heat, add chopped shallot and minced garlic, and sauté until softened.
  • Add the fresh spinach and cook until wilted, then remove from heat.
  • In a bowl, mix together the cream cheese, heavy cream, grated Parmesan, nutmeg, salt, and pepper.
  • Combine the spinach mixture with the cream cheese mixture until well blended.
  • Spoon the spinach mixture into the pastry shells, creating wells for the eggs.
  • Crack an egg into each well, sprinkle with salt, pepper, and optional everything bagel seasoning.
  • Brush the edges of the pastry with the beaten egg.
  • Bake in the preheated oven for 20-25 minutes, until the eggs are set and the pastry is golden brown.
  • Garnish with chopped fresh chives before serving.

Notes

For added flavor, experiment with different seasonings and add your favorite herbs into the spinach mixture.
