Ingredients

4 large eggs (brought to room temperature 30 minutes before blending)

1 cup (90g) old-fashioned rolled oats

1 ripe banana (the spottier

⅓ cup (80ml) maple syrup

1 tsp baking soda

1 cup (150g) fresh blueberries (frozen works too

use straight from freezer)


Instructions

  • Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
  • In a blender, combine the cottage cheese, eggs, rolled oats, banana, maple syrup, and baking soda until smooth.
  • Gently fold in the fresh blueberries.
  • Pour the mixture into the prepared baking dish and spread it evenly.
  • Bake for 25-30 minutes, or until set and lightly golden on top.
  • Let it cool for a few minutes before slicing into squares and serving.
