Ingredients
1 1/2 – 2 pounds fresh cod sliced
1 cup all purpose flour
1/2 cup panko bread crumbs
12 ounces beer
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
1 teaspoon salt
2 cups cole slaw mix
1/2 cup chopped cilantro
2 Tablespoons lime juice
2 Tablespoons pineapple juice
1/8 teaspoon salt
1/2 cup mayo
1 teaspoon honey
1 teaspoon adobo sauce
2 cups Canola oil
1 package white corn tortillas
1–2 avocados thinly sliced
Instructions
- In a bowl, mix the flour, panko bread crumbs, cumin, garlic powder, onion powder, chili powder, and salt.
- Dip the cod pieces in the beer, then coat them in the flour mixture.
- Heat the canola oil in a skillet over medium heat and fry the coated fish until golden brown and cooked through, about 3-4 minutes per side.
- In a separate bowl, combine the coleslaw mix, chopped cilantro, lime juice, pineapple juice, and salt to make the citrus slaw.
- In another bowl, whisk together the mayo, honey, and adobo sauce to create the chipotle mayo.
- Warm the corn tortillas in a dry skillet or microwave, then assemble the tacos by placing fish, citrus slaw, and avocado slices on each tortilla.
Notes
For added spice, consider adding sliced jalapeños or a dash of hot sauce to your tacos.
