This refreshing Avocado and Grapefruit Salad with Mint-Dill Vinaigrette combines the creamy texture of avocado with the zesty flavor of grapefruit, perfectly complemented by a light vinaigrette.
Ingredients
1 large grapefruit
peeled and sectioned
6 mint leaves
½ sprig fresh dill
stemmed
½ teaspoon Chinese rice vinegar
1 ½ tablespoons avocado oil
1 large ripe avocado
cut into 1-inch pieces
¼ cup Belgian endive
thinly sliced
2 teaspoons minced fresh jalapeno pepper (Optional)
¼ teaspoon coarse ground black pepper
⅛ teaspoon hibiscus salt (Optional)
Instructions
- In a small bowl, combine the mint leaves, dill, Chinese rice vinegar, and avocado oil to create the vinaigrette. Mix well and set aside.
- In a large bowl, gently combine the grapefruit sections, avocado pieces, and Belgian endive.
- Drizzle the vinaigrette over the salad mixture and toss lightly to coat.
- If desired, sprinkle with minced jalapeno, black pepper, and hibiscus salt before serving.
Notes
For an extra kick, add more jalapeno or serve with tortilla chips.
