Ingredients
4 large eggs, room temperature
2 cups (480 ml) whole milk
½ cup (100 g) granulated sugar
1 teaspoon pure vanilla extract
¼ teaspoon salt
¼ teaspoon ground nutmeg (optional, for garnish)
Whipped cream or fresh fruit for serving (optional)
Instructions
Preheat oven to 325°F (163°C). Lightly butter a 1-quart baking dish or custard cups.
In a large bowl, whisk eggs, sugar, and salt until smooth and pale. Gradually stir in milk and vanilla extract.
Strain mixture through a fine-mesh sieve to remove any bits for a silky custard.
Place the baking dish in a larger roasting pan. Pour hot water into the pan to reach halfway up the sides of the custard dish (water bath).
Bake uncovered for 40–50 minutes, until the custard is slightly wobbly in the center. Cool to room temperature, then refrigerate for at least 2 hours.
Garnish with nutmeg, whipped cream, or fresh fruit before serving.
