Ingredients
2 cups pitted large medjool dates
super fine almond flour
sunflower seed butter
pure vanilla extract
salt
dark chocolate chips
water
Instructions
- In a food processor, blend the pitted medjool dates until a sticky paste forms.
- Add the almond flour, sunflower seed butter, vanilla extract, and salt to the food processor and pulse until well combined.
- If the mixture is too dry, add water a tablespoon at a time until the dough holds together.
- Fold in the dark chocolate chips using a spatula.
- Transfer the dough into a lined baking dish and press it down evenly.
- Refrigerate for at least 30 minutes before slicing into bars.
Notes
For best results, use fresh, soft medjool dates. You can substitute sunflower seed butter with another nut or seed butter if preferred, but this recipe is designed to be peanut-free.
