Ingredients
1/2 cup Dijon mustard
1/2 cup honey
1/4 cup mayo
2 teaspoons lemon juice
3 to 4 boneless
skinless chicken breasts (about 1 ½ pounds)
2 Tablespoons salted butter
6 ounces mushrooms sliced
1/2 teaspoon seasoned salt
1/4 teaspoon black pepper
1 Tablespoon olive oil
6 slices bacon cooked then chopped
2 cups Colby-Jack shredded cheese
Freshly chopped parsley
Instructions
- In a bowl, whisk together Dijon mustard, honey, mayo, and lemon juice to create the marinade.
- Place the chicken breasts in a resealable bag and pour the marinade over them. Seal and refrigerate for at least 30 minutes (or overnight for better flavor).
- Preheat your oven to 375°F (190°C).
- In a skillet, melt the butter over medium heat. Add sliced mushrooms, seasoned salt, and black pepper, sautéing until mushrooms are tender.
- Remove the chicken from the marinade and place in a baking dish. Top with cooked bacon, sautéed mushrooms, and sprinkle Colby-Jack cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
- Garnish with freshly chopped parsley before serving.
Notes
For a smokier flavor, consider adding smoked paprika to the marinade. Serve with a side of roasted vegetables or a fresh salad.
