Description
This hearty vegetable soup is a nourishing holiday staple that warms the soul with every spoonful. Packed with seasonal vegetables and seasoned to perfection, it’s perfect for sharing with loved ones.
Ingredients
2 tablespoons olive oil
1 medium yellow onion
2 cloves garlic
2 medium carrots diced
2 stalks celery diced
1 medium zucchini diced
1 bell pepper diced (any color)
1 can (14.5 ounces) diced tomatoes with juice
4 cups vegetable broth
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and pepper to taste
1 cup green beans trimmed and cut into 1-inch pieces
1 cup spinach or kale
Juice of 1 lemon
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until fragrant and the onion is translucent.
- Stir in the diced carrots, celery, zucchini, and bell pepper. Cook for about 5-7 minutes until the vegetables begin to soften.
- Add the canned diced tomatoes with their juice, vegetable broth, dried thyme, dried oregano, salt, and pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let it simmer for 15 minutes.
- Add the green beans and spinach or kale and simmer for another 5 minutes until the green beans are tender.
- Finish with a squeeze of fresh lemon juice before serving.
Notes
Feel free to customize the vegetables based on what you have on hand. This soup can also be made in advance and stored in the refrigerator for up to 3 days.
