Ingredients
4 tablespoons (30 g) all-purpose flour
2 tablespoons (25 g) brown sugar, lightly packed
½ teaspoon baking powder
¼ teaspoon ground cinnamon
Pinch of ground nutmeg (optional)
1 pinch salt
3 tablespoons (45 ml) milk (dairy or non-dairy)
1 tablespoon (15 ml) vegetable oil (or melted butter)
¼ teaspoon vanilla extract
2 tablespoons (15 g) finely grated carrot (fresh, not pre-packaged)
1 tablespoon (10 g) chopped walnuts or pecans (optional)
1 tablespoon (10 g) raisins (optional)
Optional Topping: Cream cheese frosting, powdered sugar, or whipped cream.
Instructions
Prepare the mug: Use a microwave-safe mug (12 oz / 350 ml). Grease lightly with butter or non-stick spray.
Mix dry ingredients: Add flour, sugar, baking powder, cinnamon, nutmeg, and salt. Stir to combine.
Add wet ingredients: Mix in milk, oil, and vanilla extract. Stir until smooth and lump-free.
Fold in add-ins: Stir in grated carrot, nuts, and raisins if using.
Microwave: Cook on high for 90 seconds to 2 minutes depending on microwave wattage. The cake should rise, set, and stay moist.
Cool & serve: Let sit for 1–2 minutes before eating. Add frosting, honey, or powdered sugar if desired.
Notes
Grate carrot finely so it cooks evenly.
Do not overmix; stir until just combined.
Use a large mug to prevent overflow.
Adjust cooking time in 10–15 second increments if needed.
