This 1-Hour Vegan Shepherd’s Pie features a savory lentil filling topped with creamy mashed potatoes, making it a comforting and hearty dish perfect for any occasion.
Ingredients
3 pounds yukon gold potatoes
partially peeled and thoroughly washed
3–4 Tbsp vegan butter
sea salt and black pepper to taste
1 Tbsp olive oil
1 medium onion
diced
2 cloves garlic
minced
2 Tbsp tomato paste
1 healthy pinch each of sea salt and black pepper
1 1/2 cups uncooked brown or green lentils
rinsed and drained
4 cups vegetable stock
2 tsp fresh thyme
or 1 tsp dried thyme per 2 tsp fresh
1 10-ounce bag frozen mixed veggies: peas
carrots
green beans
and corn
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and chop the potatoes, then boil them in salted water until fork-tender, about 15 minutes.
- Drain the potatoes and return them to the pot. Add vegan butter, sea salt, and black pepper, then mash until smooth.
- In a large skillet, heat olive oil over medium heat. Sauté the diced onion until translucent, about 5 minutes. Add minced garlic and cook for an additional 1-2 minutes.
- Stir in the tomato paste, and season with salt and pepper. Add lentils and vegetable stock; bring to a simmer.
- Add thyme and mixed veggies, cooking until the lentils are tender, about 20 minutes.
- Transfer the lentil filling to a baking dish, spreading it out evenly. Top with the mashed potatoes, smoothing to cover.
- Bake in the preheated oven for 20-25 minutes until the top is golden brown. Let cool slightly before serving.
Notes
Feel free to customize the mixed veggies based on what you have on hand. This dish can be made ahead and reheated for easy meals.
